Lemon Cheesecake (Baked)
Ingredients
Base
100gms flour
50 gm sugar
50 gms melted butter
Filling
300 gms vegan cream cheese
zest and juice of two lemons
100 gms sugar
3 tbsps flour
2 eggs
Instructions
Mix the base ingredients and press into a 20cm diameter loose bottomed cheesecake dish
Place in 200° oven and turn down to 180° immediately.
Bake for 10-15 minutes until brown on top.
Allow to cool for 20 minutes
mix the filling ingredients in a large bowl and beat well until thick and smooth
Pour into dish on top of the base.
Bake at 150°-160° for 30-45 minutes until risen and firm.
Cool and remove from tin and base.
