Lemon Cheesecake (Baked)

Ingredients

Base
  • 100gms flour
  • 50 gm sugar
  • 50 gms melted butter
Filling
  • 300 gms vegan cream cheese
  • zest and juice of two lemons
  • 100 gms sugar
  • 3 tbsps flour
  • 2 eggs

Instructions

  1. Mix the base ingredients and press into a 20cm diameter loose bottomed cheesecake dish
  2. Place in 200° oven and turn down to 180° immediately.
  3. Bake for 10-15 minutes until brown on top.
  4. Allow to cool for 20 minutes
  5. mix the filling ingredients in a large bowl and beat well until thick and smooth
  6. Pour into dish on top of the base.
  7. Bake at 150°-160° for 30-45 minutes until risen and firm.
  8. Cool and remove from tin and base.
